Making soup has always been a special love of Drayton resident Penny Wright.
“When my children were small there was always a pot of soup on the stove, as (there was) when I was a child. As a light meal, after-school snack or introduction to a more elaborate meal, soup seldom fails to satisfy,” states Wright, who also notes soup is “a smart way to use leftovers.”
“Coming from a family of six, and having created a family of five, I was always very careful with my food budget,” she explains.
With her three children grown and moved away, Wright, who grew up in Waterloo, recently found time to put together a collection of recipes for her favorite soups called simply It’s Good Soup.
She will be holding a soup tasting and book sale event at Drayton Foodmarket on Sept. 7, from 10am to 1pm and will also be at the Mapleton Harvest Festival in Drayton on Sept. 21 from 9am to 4pm.
